We can name countless P-words that we covet. Pizzas, Piña Coladas, and impressive pubes just to name three.
But until now, Vietnamese soup was nowhere on that list.
That was before we dined at Pho Envy, now open on Hillcrest in the building downstairs from Equinox.
A quaint little eatery with bright, clean colors and a friendly staff, it’s pho worth writing home about, especially for just $8-$9 per giant bowl. Filled with delicately flavored broth, rice noodles and your choice of meat or veggies, it comes with all the usual fresh additions (lime, jalapeños, basil and sprouts) that really bring out the flavors.
Of course, we’re not big on pho when it’s as hot outside as what’s simmering in a giant pot on their kitchen stove. Thankfully, there’s more to envy here than just the soup.
Noodle bowls and stir-fried flat noodles are plentiful, but even a simple-sounding dish of grilled chicken with a side of fried egg, lettuce, cucumbers, tomatoes and steamed rice is packed with flavor in what is a delightfully healthy dish.
Pho Envy is our latest obsession and we can’t wait to work our way through the entire menu.
Then we’ll be the ones everyone envies.
