Kitchen LTO 101: New chef, menu and art every four months, i.e. limited time only.

Now under the culinary leadership of Chef Brooke Egger, we wish they’d ditch the concept and turn Kitchen LTO into Kitchen PSHF. As in Please Stay Here Forever.

Sure, we voted for Brooke’s dish at the competition to determine who would be the restaurant’s third culinary visionary, but we had no idea how much creativity was truly up the sleeves of her chef’s coat.

Start with the ancient grain granola, a blend of coconut chia, cacao nibs and seasonal fruit with add-your-own goji berry cream. Sounds crazy, but it’s truly crave-worthy. (And pairs well with a glass of their daily sangria!)

Her “Landlocked Sashimi” of beet- and tarragon-cured salmon, black currant tea sea bass, micro greens and yuzu hibiscus honey vin may also not be an obvious morning selection, but it’s the dish that got her the gig in the first place. See what all the fuss is about.

For truer brunch offerings, try the bacon waffle. Along with honey, cheddar and candied pecans, the Belgian treat is topped with an over-easy Vital Farms egg and Béchamel sauce. Fold up the waffle and eat it like a taco. (We like to think of it as running away from the border.)

But if you’re going to truly experience brunch as the breakfast-lunch hybrid God intended, the Billion $ Burger (above) is as good an example as you’ll ever find. Brooke’s burger mix of pork and beef is formed into a generous patty, grilled to perfection then topped with slaw, Gjetost cheese and an over-easy Vital Farms egg on salted brioche. It’s a delectable blend of salty and sweet that makes us moan happily.
